Canteloupe Crudo, Chia Seed Crema, Blueberry and Basil Pesto

Orange Blossom Farms in Carrizo Springs Texas brings us organic watermelon and canteloupe, also citrus when in season.  The blueberries are from Vidor Texas, just the other side of Beaumont.  The chia seed is extremely healthy as a vegetarian source for omega fatty acids and natural antioxidants.  I found it to be a great source for vitamins and minerals with results of stamina and less dehydration.    The recipe below is another way to enjoy melon, cutting it thin allows it to almonst melt on the tongue.

Chia Seed Crema

1 Tablespoon chia seeds

3 clementines, juiced

1 T agave nectar, light amber

4 oz greek yogurt

Mix all ingredients well, allow to sit for 20 minutes, this will allow for the chia seeds to ‘gel’ and set the sauce.

Blueberry and Basil Pesto

8oz blueberries, fresh

2 oz marcona almonds

1/2 oz finely grated parmesan

1 oz olive oil

1 oz basil, fine chopped

Mix all in blender, season with salt
