Thinking of summer grilling, this African spice blend was first introduced to me by a woman from South Africa, by way of Virginia. Traditionally Ethopian and used as a seasoning, I like it with meats on the grill, particular tougher cuts on the skewer.
Berbere Spice
Beef skewers, steak, pork, chicken or lamb
½ t cinnamon
3 T paprika
1 t salt
1 t tumeric
1 T grated fresh ginger root
5 t red pepper flakes
1 t peppercorns
8 cloves, ground
1 t coriander
1 t fenugreek
½ t allspice, ground
1 t cardamom
2 t cumin powder
toast all seeds and grind til fine
