Texas Cobb Salad

Pulled Breast of BBQ Chicken, Texas Blue Cheese, Jicama, Avocado, Romaine, Smoked Bacon, Tomato,

Roasted Poblano Pepper and Buttermilk Dressing

Serves one

1 head, heart of romaine lettuce, chiffonade

2 oz bbq pulled chicken

2 oz avocado, diced

1 oz Texas blue cheese crumbled

2 oz bacon

1 oz jicama diced

2 oz tomato, diced

2 oz poblano pepper buttermilk dressing



Toss lettuce with dressing and half of the salad components.  Arrange in bowl and garnish with remaining ingredients, linear.




Roasted Poblano Pepper and  Buttermilk Dressing, yields one pt

1 cup yogurt

1 cup buttermilk

 1 T ranch dressing mix

1 oz cilantro, fine chopped

1/2 of a roasted poblano

Juice of half a lime

Mix well together



Mix lettuce well with dressing, season with salt and pepper and place in bowl.

Arrange the remaining ingredients on top of salad linear.

Garnish with fresh Anaheim pepper rings
