Wisconsin Blue Cheese Stuffed Dates Wrapped in Bacon

Black River Blue Cheese Stuffed Medjool Dates

Cider Cured Bacon, Maple and Balsamic Reduction





12 large Medjool dates, pitted

1 cup Wisconsin blue cheese

4 slices bacon, cut into thirds

½ c Vermont maple syrup

2 T balsamic vinegar reduction


Cut dates one one side, remove pit and stuff with crumbled blue cheese

Press back together to original shape or a little larger due to amount of blue cheese

Stretch bacon and wrap with strips, lay seam end down on cooking tray

Back in oven at 350 degrees for 7 minutes or until bacon is done and crispy.

Try not to over cook as cheese will melt out of the date.

Immediately after removing from oven, generously pour maple syrup over dates

Drizzle balsamic reduction syrup over dates before service
