Prime Rib of Berkshire Pork

Rack of Pork

Score rack, stuff with rosemary, bay leaves and thyme

Rub generously with salt and pepper

2 carrots, peeled and larged dice

2 celery stalk,large dice

6 garlic cloves, smashed

2 onions, large dice

1 T mustard Seed

1 T fennel seed

Cobbler Batter

8 eggs

1/4 cup sugar

2 c flour

12 oz browned butter

1 tsp sage

1 tsp thyme

1 tsp Dijon

salt and pepper

Grilled Apple Cobbler for one portion

½ granny smith apple, peeled and quartered

1 T white balsamic vinaigrette to dress apple

mark apple wedges on grill, cut into fouths

put in buttered ramekins and pour  ___oz batter over

back at 350  ____ minutes

Roasted Poblano Fondue

3 shallots, sliced

1T coriander seeds, toasted

1 T cumin

3 bay leaves

3 fresh thyme sprigs

16 ounces white wine

16 ounce heavy cream

6 poblano, roasted and peeled

4 ounces goat cheese
